Frank McCabe
General Manager - Catering
Services
Frank has over 20 years experience within
the commercial catering industry, 15 of
which have been in senior catering management
positions.
Since his arrival on campus in May 1996,
Frank has overseen the catering operation
which has grown from a turnover of around
£700,000 to that approaching £1.5
million today.
Frank says, " We shall continue
our endeavors to develop the catering services
that will reflect real quality with up to
the minute trends and we will always listen
and act upon student and staff opinion."

Oliver McCrossan
Deputy General Manager -
Catering Services
Oliver has been in the catering business
for almost 30 years, working as a chef in
hotels and as a catering manager in a large
commercial operation. During his five year
period here at Glasgow Caledonian University,
Oliver achieved the prestigious title of
Catering Manager of the Year which was awarded
by the Hotel & Catering Association.
Oliver is always on the lookout for the
latest equipment and technology that will
enhance and improve the catering services
at the University.

Ian Fulton
Head Chef
Ian is the most experienced member of
the catering team and has spent nearly 35
years in the catering industry. In 25 years
as a head chef he has catered for an eclectic
range of dignitaries including, Royalty,
Prime Ministers, Presidents, Church Leaders
and Captains of Industry.
However due to the diverse catering requirements
at the University, he points out "the
most challenging and satisfying role in
my career to date is that of head chef here
at GCU" (a position he has held for
the past 4 years).

Brian Watson
Second Chef
Brian is, what is affectionately called
in the catering trade, a "foodie"
in that his knowledge and passion of food
knows few boundaries. He constantly buys
up all types of food and drink publications
and picks up ideas from his many travels
throughout the world. His oriental dishes
are a regular feature on the refectory menus.
Brian has achieved top chef qualifications
and has won many medals in trade competitions
during his 17 years working with food. Brian
took up his position as second chef in April
1996.

Jim McMahon
Cleaning / Hygiene Manager
Jim has been in the Cleaning and Hygiene
business for over 12 years. His role within
the catering operation is of the upmost
importance. First class hygiene standards
are at the very top of the university's
priorities when catering for students, staff
and guests. Jim works tirelessly in heading
up a dedicated team that ensures that these
standards are met and maintained throughout
all of the campus catering operations.

Marie Robinson
Administration Manager
Marie has been in business administration
for over 18 years, working for some large
“Blue Chip” companies, before joining the
catering management team at Glasgow Caledonian
University in October 1997. The role she
performs is exigent and diverse and with
the recent addition of the administration
of this web site, it presents her with a
further challenge. One, according to Marie,
that she “relishes with gusto”.

Roslynn
McNeil
Front of House Manager
Before joining the catering team at Glasgow
Caledonian University, Roslynn had gained
over 10 years experience within the industry.
Most of which were as a Catering Manager of
a large commercial operation.
She has boundless enthusiasm and has helped
develop the Refectory catering operation
to what today can boast as having “one of
the widest choices of food in Scotland”.
